Coconut Rice



This rice is delicious with Asian inspired food and even for breakfast. Sorry for the lack of a picture but it looks like a sticky rice when it's finished. You can pack it into a cup and flip it over on the plate to unmold it. If you like coconut, like I do, I think you'll enjoy it.

Recipe by Amber Share

Serves 4

2 cups light coconut milk

2 cups water

1 teaspoon sugar

1 teaspoon salt
1 tablespoon vegetable oil
2 cups jasmine rice

Bring everything but the rice to a boil in sauce pan with a tight fitting lid. Add rice. Stir. Lower heat and simmer, covered for 18 minutes. Remove from heat. Let stand 5 minutes before serving.
