Hummus

2 cans unsalted garbanzo beans, rinsed and drained *
juice of 1 lemon
2 tablespoons olive oil
1/4 cup raw tahini (unroasted)
2 teaspoons salt
2 cloves garlic
Add all ingredients to a food processor (or blender if you don't have a food processor). While processing slowly stream in cold water until the mixture is thin enough to mix thoroughly then process until smooth (be careful not to add more water than needed or the dip will be runny). It may be necessary to stop and scrape down the sides occasionally. Chill overnight to allow the flavors to marry. Pairs well with vegetable crudité, pita, grainy, crisp-bread crackers, and olives.
*If you can’t find unsalted garbanzo beans lessen the amount of salt you add.
